In the winery, he draws on his skill and expertise in a characteristically thorough and painstaking manner, putting the accent on the typicity of his “terroir” and conferring his own special touch and talent.

If everyone of their Champagne is unique, it’s because Martine and Pascal Serveaux have long-since discovered the secret of the relation between Man and Nature at that most critical of moments – blending. It is on this momentous occasion that they and their oenologist meet in the cellars to taste and skilfully blend wines from the year’s harvest with their reserve wines from different grape varieties and cru classifications, each contributing their own experience, sensory perception and emotion.

In Champagne country, this singular, and almost secret, operation is regarded as a fine art, a unique combination of know-how and love of wine and an affirmation of House style. Once blended, Serveaux Fils champagnes are then stored in the cellar for several years, slowly coming to maturity.
